Harvest all flower tips in July, before the lavender flowers fully bloom and before the scent of lavender is in the air. Freshly picked lavender is steam distilled to obtain its essential oil while fresh. The oil produced in this way is pale yellow in color and has a slightly sweet top note with a cool herbal aroma and a balsamic base that complements the vanilla and tonka bean.
